I hate to admit this. But every so often, I get tired of eating boring, healthy salads. Sometimes, I just want to get down and dirty with a good old fashioned Cobb Salad.
I almost always have bacon in the fridge/freezer, and a few hard boiled eggs laying around. Add some blue cheese, and voila!
Ingredients:
2 cups Romaine lettuce, chopped
1/2 Hard Boiled egg, sliced
2 Tbs Red onion, thinly sliced
1/4 cup Cherry tomatoes, chopped
2 Tbs Radishes, thinly sliced
1/4 Avocado, sliced
1 slice Bacon, center-cut, cooked and chopped
2 Tbs Blue cheese dressing, Bobs or similar all-natural chunky dressing
Salt and Pepper to taste
Preparation:
Place lettuce, red onion, tomatoes, and radishes in large mixing bowl. Toss with Blue Cheese dressing.
Top with avocado and bacon.
Serve
