Kale Caesar Salad

It may be trendy, it may be cool….but I don’t think I will ever outgrow kale.

Call this a trendy spin on the classic Caesar Salad or call it anti-oxidizing. I simply call it a delicious salad you can throw together in 15 minutes. 


Serves 6-8 people (side dish)

8 cups Lacinato kale
1/4 cup Tessemae’s Caesar Dressing 
6 slices All-natural, center cut bacon
6 Green onions, chopped
2 cups Croutons
1/2 cup Parmesan, shaved
1 tsp Sea Salt


Wash kale in cold water, and spin to dry. Chop and place in large mixing bowl. Add green onions. Toss with dressing and let sit at room temperature while you prepare the other ingredients.

Cook bacon in skillet/pan until crispy. Place on paper towels to remove access grease. Chop.

Chop croutons into pea-sized pieces. You can certainly keep the croutons whole, but I find it more enjoyable when I can enjoy tiny, crunchy, surprise croutons in every bite. Trust me!

Toss the dressed kale with green onions, bacon, Parmesan, and sea salt.
