My husband is convinced I just fed him straight up butter for dinner. Spoiler alert. It was cauliflower and there was zero butter in sight.
1 head cauliflower
1 Tbs pink Himalayan Sea Salt
1 tsp fresh ground black pepper
1 Tbs olive oil
1/4 cup Panko
2 Tbs shredded Parmesan
Preheat oven to 400 degrees (convection setting if you have it).
Cut cauliflower into small florets, about 1 sq. inch pieces. Spread out on baking sheet. Toss in olive oil, salt, and pepper. Sprinkle Panko on top.
Bake for 15 minutes, turning once.
Sprinkle with Parmesan. Bake 5 more minutes until cheese is melted, cauliflower is soft and crispy in spots.
